The Age Old Combination Of Beans And Corn

Don’t make a face yet! A lot of people frown at the thought of beans while others adore it. Whichever category you fall in, you would definitely love this recipe for the age old combination of beans and corn. After beans and bread, this is definitely the next best thing. Combining corn with beans cooked in a pressure cooker is a meal that will make you fall in love with beans if this was not your favorite meal. The crunchiness of the corn… the sweet smell of the beans… yum!

It used to be my favourite meal when i was growing, am not anybody can prepare it like my mum!

Some healthy tips you should know about this meal is that corn which is rich in high fiber content is great for your digestive system likewise the beans.

What you would need:

Ingredients

  • 1 cup fresh Corn ( boiled)
  • 2 cups brown Beans(black eye peas)
  • 4 pieces whole Tomato(chopped)
  • 2 cooking spoons tomato/ pepper mix
  • Handful Ugwu( chopped)
  • 1 medium size Onion
  • 2 tbsps tomato purée
  • 1 tablet crayfish seasoning
  • 2 beef seasoning cubes
  • 2 Cooking spoons of Palm oil
  • 2 bottles of 60 cl water
  • Salt to taste

How to;

  • If you are using corn straight from the husk, boil it till it’s soft or you can get the preserved tin form.
  • Beans takes a relatively long time to cook so, combine in a pressure cooker, the beans and all other ingredient except for the oil. Add water and cook under medium heat for about thirty minutes.
  • Add the cooked corn and vegetable into the beans, stir and  cook for 2 minutes. Note that vegetables don’t need to be cooked for too long.
  • Add the oil and cook for 3 minutes. Serve with desired sauce.
